The Angus Advantage: Steak Sliders

Now that it’s football season many are firing up the grill for tailgate parties. Steak sliders are the perfect addition to your tailgate because they’re flavorful, juicy, and are quick grab bites.

Chef Michael Ollier recommends starting off with a top sirloin from Certified Angus Beef Brand. It’s a great cut full of flavor for a great value. Keep the seasoning simple with a little kosher salt and fresh cracked pepper before putting it on a blazing hot grill. That high heat will help develop a good, crisp crust. Once it’s done, pull it off the grill and let it rest a little to allow the juices to redistribute. Chef Michael recommends slicing the steak very thin and against the grain, that way you have the shortest possible bites to chew.

Next, toast your buns, add a little cheddar cheese, red onions, other grilled veggies, and sauce. For this particular recipe, Chef Michael used a bourbon barbecue sauce. To make your own, just choose your favorite sauce and add a hint of bourbon to it to up the flavor.

So, what exactly is the angus advantage? As Chef Michael points out, angus is specifically just a breed of cattle. It’s a great starting point for good beef, but to become Certified Angus Beef means it has to meet ten strict standards, with marbling being the most important.
